Scallion Pancakes (Green Onion Fritters)

 

 

 

Ingredients:

– 1 bunch of scallions (green onions), chopped
– 2 large eggs
– 1 cup all-purpose flour
– 1 cup water
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon garlic powder (optional)
– 1/4 teaspoon baking powder
– Oil for frying

1. **Prepare the Batter:**
– In a large mixing bowl, whisk the eggs until well beaten.
– Add the flour, water, salt, black pepper, garlic powder (if using), and baking powder. Mix until you have a smooth batter.
– Fold in the chopped scallions, making sure they are evenly distributed throughout the batter.

2. **Heat the Oil:**
– Heat a few tablespoons of oil in a large non-stick skillet over medium-high heat.

3. **Cook the Pancakes:**
– For each pancake, pour about 1/4 cup of the batter into the skillet. Spread it out slightly with the back of a spoon to form a round pancake.
– Cook for 2-3 minutes on each side, or until golden brown and crispy.
– Adjust the heat as needed to avoid burning and ensure the pancakes cook through.

4. **Drain and Serve:**
– Transfer the cooked pancakes to a paper towel-lined plate to drain any excess oil.
– Serve hot with soy sauce or your favorite dipping sauce.
