White Chocolate Truffles

 

 

Ingredients:

– 1 cup heavy cream
– 12 ounces white chocolate, finely chopped (or white chocolate chips)
– 1 teaspoon vanilla extract
– 1/4 cup unsalted butter, cut into small pieces
– 1/2 cup powdered sugar (optional, for rolling)
– Additional white chocolate for coating (about 8 ounces)

Instructions:

 

1. **Prepare the Ganache:**
– In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.
– Remove the saucepan from the heat and add the chopped white chocolate and butter. Let it sit for a minute to melt, then stir until smooth and well combined.
– Stir in the vanilla extract.
– Pour the ganache into a bowl and let it cool to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 2 hours or until firm.

2. **Shape the Truffles:**
– Using a small cookie scoop or a spoon, scoop out small portions of the ganache and roll them into balls with your hands. If the ganache is too sticky, you can dust your hands with powdered sugar to make it easier to handle.
– Place the truffle balls on a baking sheet lined with parchment paper. Once all the truffles are shaped, refrigerate them for another 30 minutes to firm up.

3. **Coat the Truffles:**
– Melt the additional white chocolate in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
– Using a fork or a dipping tool, dip each truffle ball into the melted white chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off before placing the coated truffle back on the parchment-lined baking sheet.
– Optionally, you can sprinkle some finely grated white chocolate or decorative sprinkles on top of the truffles while the coating is still wet for an extra touch.

4. **Set the Truffles:**
– Allow the coated truffles to set at room temperature or place them in the refrigerator for quicker setting.

5. **Serve:**
– Once the truffles are set, transfer them to an airtight container. Store them in the refrigerator until ready to serve.
