Ingredients

  • Pizza dough (homemade or store-bought)
  • 2 tablespoons olive oil
  • 8 large eggs
  • Kosher salt
  • Fresh ground black pepper
  • 2 tablespoons cold water
  • 1 1/2 tablespoons butter
  • 1 1/4 cups shredded provolone cheese
  • 1 cup shredded Pepper Jack cheese
  • 6 slices bacon, cooked crispy and coarsely chopped
  • 1/2 lb bulk pork breakfast sausage, browned
  • 1/2 red pepper, finely diced
  • 3 green onions, chopped
  • Salsa, optional for serving

Directions

  1. Preheat your oven to 425°F (220°C). Lightly grease a 10×15-inch rimmed baking sheet with olive oil.
  2. Press the pizza dough onto the prepared baking sheet using your hands and fingers. If the dough resists and pulls back, let it rest for a minute, then continue pressing. Gently push some of the dough up along the edges to create a crust.
  3. Bake the crust for 7 to 8 minutes, just until it starts to set.
  4. In a medium bowl, whisk the eggs with the cold water until well blended.
  5. Melt the butter in a large nonstick skillet over medium heat. Pour in the eggs and cook slowly, stirring gently with a spatula. Scramble the eggs until they are just slightly undercooked, since they will continue cooking in the oven. Season with kosher salt and black pepper.
  6. Spread the scrambled eggs evenly over the partially baked pizza crust.
  7. Top with the shredded provolone cheese and Pepper Jack cheese. Then add the chopped bacon, browned sausage, diced red pepper, and green onions evenly across the top.
  8. Return the pizza to the oven and bake for 10 to 12 minutes, or until the cheese is fully melted and bubbly.
  9. Turn on the broiler for the final 1 to 2 minutes to lightly brown the top. Keep a close eye on it and rotate the pan if needed to prevent burning.
  10. Remove the breakfast pizza from the oven, slice into pieces, and serve warm. Add salsa on the side if desired.
