Coconut Cloud Cake

This Coconut Cloud Cake is light, fluffy, and incredibly creamy — just like its name suggests. Soft white cake layers are filled with a smooth whipped cream cheese frosting and covered with sweet shredded coconut for a dreamy, melt-in-your-mouth dessert. It’s perfect for holidays, gatherings, or anytime you want a beautiful coconut treat.

Ingredients

  • 1 box white cake mix (plus ingredients listed on the box)

  • 8 oz cream cheese, softened

  • ½ cup granulated sugar

  • ½ tsp vanilla extract

  • 1 cup heavy whipping cream, cold

Directions

  1. Bake the Cake
    Prepare the white cake mix according to the package instructions.
    Bake in two 8-inch round pans or one 9×13 pan.
    Allow the cake to cool completely before assembling.

  2. Make the Cream Cheese Filling
    In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.

  3. Whip the Cream
    In a separate bowl, whip the cold heavy cream until stiff peaks form.

  4. Combine the Frosting
    Gently fold the whipped cream into the cream cheese mixture until light and fluffy.

    If using round cakes, spread the frosting between the layers and over the top and sides.
    If using a sheet cake, simply spread the frosting evenly over the top.

  6. Add the Coconut

  7. Chill and Serve
    Refrigerate for about 1 hour before serving so the frosting sets.
