Coconut Cloud Cake
This Coconut Cloud Cake is light, fluffy, and incredibly creamy — just like its name suggests. Soft white cake layers are filled with a smooth whipped cream cheese frosting and covered with sweet shredded coconut for a dreamy, melt-in-your-mouth dessert. Ingredients

1 box white cake mix (plus ingredients listed on the box)

1 cup heavy whipping cream, cold

2 cups shredded coconut (sweetened or unsweetened)
Directions

Bake the Cake
Prepare the white cake mix according to the package instructions.
Bake in two 8-inch round pans or one 9×13 pan.
Allow the cake to cool completely before assembling. -
Make the Cream Cheese Filling
In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. -
Whip the Cream
In a separate bowl, whip the cold heavy cream until stiff peaks form. -
Combine the Frosting

If using round cakes, spread the frosting between the layers and over the top and sides.
