Cheesy Lasagna Roll-Ups
Ingredients:
For the Filling:
- Ricotta cheese: 1 ½ cups
- Mozzarella cheese: 1 cup, shredded
- Parmesan cheese: ½ cup, grated
- Egg: 1
- Spinach (optional): 1 cup, finely chopped and cooked
- Garlic powder: 1 tsp
- Salt and pepper: To taste
- Fresh parsley or basil: 2 tbsp, chopped
For the Sauce:
- Marinara or pasta sauce: 2 cups
- Olive oil: 1 tbsp
- Garlic: 2 cloves, minced (optional)
For the Roll-Ups:
- Lasagna noodles: 12 sheets, cooked and drained
- Shredded mozzarella (for topping): ½ cup
- Fresh thyme or basil: For garnish
Instructions:
- Prepare the Filling:
- In a large bowl, mix together the ricotta cheese, shredded mozzarella, Parmesan cheese, egg, garlic powder, salt, pepper, and fresh parsley or basil. If using spinach, mix it in as well. Set aside.
- Cook the Lasagna Noodles:
- Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean surface.
- Make the Sauce:
- Heat olive oil in a saucepan over medium heat. Add minced garlic and sauté until fragrant. Stir in the marinara or pasta sauce and simmer for 5 minutes.
- Assemble the Roll-Ups:
- Spread a thin layer of the ricotta mixture evenly over each lasagna noodle.
- Roll up the noodles tightly and place them seam-side down in a greased baking dish.
- Add Sauce and Cheese:
- Pour the marinara sauce over the roll-ups, making sure they are evenly coated.
- Sprinkle shredded mozzarella on top.
- Bake:
- Preheat the oven to 375°F (190°C).
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish and Serve:
- Remove the dish from the oven and let it cool for a few minutes.
- Garnish with fresh thyme or basil and serve warm.
