Strawberry Cream Cheesecake Bars

 

 

Ingredients:

For the Crust:
  • Graham cracker crumbs: 1 ½ cups
  • Unsalted butter: ½ cup, melted
  • Sugar: 2 tbsp
For the Cream Layer:
  • Cream cheese: 16 oz (450g), softened
  • Sugar: ¾ cup
  • Vanilla extract: 1 tsp
  • Eggs: 2
For the Strawberry Topping:
  • Fresh strawberries: 2 cups, chopped
  • Strawberry gelatin (Jell-O): 1 packet (3 oz / 85g)
  • Water: 1 cup, boiling
For the Crumble Topping:
  • Graham cracker crumbs: ½ cup
  • Brown sugar: 2 tbsp
  • Unsalted butter: 2 tbsp, melted

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
    • Press the mixture evenly into the bottom of a greased or parchment-lined 9×9-inch baking dish.
    • Bake for 8–10 minutes, then set aside to cool.
  2. Make the Cream Layer:
    • In a large bowl, beat the cream cheese and sugar together until smooth.
    • Add vanilla extract and eggs, one at a time, mixing until fully incorporated.
    • Pour the cream mixture over the baked crust and spread evenly.
    • Bake for 20–25 minutes, or until the center is set. Allow to cool completely.
  3. Prepare the Strawberry Topping:
    • Dissolve the strawberry gelatin in 1 cup of boiling water, stirring until fully dissolved.
    • Let the mixture cool slightly, then stir in the chopped strawberries.
    • Carefully pour the strawberry mixture over the cooled cream layer. Refrigerate until fully set, about 2–3 hours.
  4. Make the Crumble Topping:
    • In a small bowl, mix graham cracker crumbs, brown sugar, and melted butter until crumbly.
    • Sprinkle the crumble over the set strawberry topping.
  5. Slice and Serve:
    • Once fully chilled and set, cut into squares and serve.
