Strawberry Cream Cheesecake Bars
Ingredients:
For the Crust:
- Graham cracker crumbs: 1 ½ cups
- Unsalted butter: ½ cup, melted
- Sugar: 2 tbsp
For the Cream Layer:
- Cream cheese: 16 oz (450g), softened
- Sugar: ¾ cup
- Vanilla extract: 1 tsp
- Eggs: 2
For the Strawberry Topping:
- Fresh strawberries: 2 cups, chopped
- Strawberry gelatin (Jell-O): 1 packet (3 oz / 85g)
- Water: 1 cup, boiling
For the Crumble Topping:
- Graham cracker crumbs: ½ cup
- Brown sugar: 2 tbsp
- Unsalted butter: 2 tbsp, melted
Instructions:
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
- Press the mixture evenly into the bottom of a greased or parchment-lined 9×9-inch baking dish.
- Bake for 8–10 minutes, then set aside to cool.
- Make the Cream Layer:
- In a large bowl, beat the cream cheese and sugar together until smooth.
- Add vanilla extract and eggs, one at a time, mixing until fully incorporated.
- Pour the cream mixture over the baked crust and spread evenly.
- Bake for 20–25 minutes, or until the center is set. Allow to cool completely.
- Prepare the Strawberry Topping:
- Dissolve the strawberry gelatin in 1 cup of boiling water, stirring until fully dissolved.
- Let the mixture cool slightly, then stir in the chopped strawberries.
- Carefully pour the strawberry mixture over the cooled cream layer. Refrigerate until fully set, about 2–3 hours.
- Make the Crumble Topping:
- In a small bowl, mix graham cracker crumbs, brown sugar, and melted butter until crumbly.
- Sprinkle the crumble over the set strawberry topping.
- Slice and Serve:
- Once fully chilled and set, cut into squares and serve.
