Lemon Cream Layered Dessert

 

 

 

Ingredients:

For the Layers:
  • Graham crackers or ladyfingers: 2 packs
  • Lemon curd: 1 ½ cups (store-bought or homemade)
  • Whipping cream: 2 cups
  • Powdered sugar: ½ cup
  • Cream cheese: 8 oz (225g), softened
  • Vanilla extract: 1 tsp
For Garnish:
  • Fresh raspberries: 1 cup
  • Lemon zest: 1 tsp (optional)

Instructions:

  1. Prepare the Whipped Cream:
    • In a large mixing bowl, whip the cream and powdered sugar together until stiff peaks form. Set aside.
  2. Make the Cream Filling:
    • In another bowl, beat the softened cream cheese until smooth.
    • Add 1 cup of whipped cream to the cream cheese and gently fold it together to make a light, creamy filling.
    • Add the vanilla extract and mix until combined.
  3. Assemble the Layers:
    • In a 9×9-inch baking dish or similar, spread a thin layer of the cream filling at the bottom to prevent sticking.
    • Place a layer of graham crackers or ladyfingers over the cream.
    • Spread a layer of lemon curd on top of the crackers, followed by a layer of the cream filling.
    • Repeat the layers (crackers, lemon curd, cream filling) until all ingredients are used, ending with the cream filling as the top layer.
  4. Chill:
    • Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the layers to set and soften.
  5. Garnish and Serve:
    • Before serving, top the dessert with fresh raspberries and lemon zest for added flavor and a pop of color.
    • Slice into squares and serve chilled.
