Lemon Cream Layered Dessert
Ingredients:
For the Layers:
- Graham crackers or ladyfingers: 2 packs
- Lemon curd: 1 ½ cups (store-bought or homemade)
- Whipping cream: 2 cups
- Powdered sugar: ½ cup
- Cream cheese: 8 oz (225g), softened
- Vanilla extract: 1 tsp
For Garnish:
- Fresh raspberries: 1 cup
- Lemon zest: 1 tsp (optional)
Instructions:
- Prepare the Whipped Cream:
- In a large mixing bowl, whip the cream and powdered sugar together until stiff peaks form. Set aside.
- Make the Cream Filling:
- In another bowl, beat the softened cream cheese until smooth.
- Add 1 cup of whipped cream to the cream cheese and gently fold it together to make a light, creamy filling.
- Add the vanilla extract and mix until combined.
- Assemble the Layers:
- In a 9×9-inch baking dish or similar, spread a thin layer of the cream filling at the bottom to prevent sticking.
- Place a layer of graham crackers or ladyfingers over the cream.
- Spread a layer of lemon curd on top of the crackers, followed by a layer of the cream filling.
- Repeat the layers (crackers, lemon curd, cream filling) until all ingredients are used, ending with the cream filling as the top layer.
- Chill:
- Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the layers to set and soften.
- Garnish and Serve:
- Before serving, top the dessert with fresh raspberries and lemon zest for added flavor and a pop of color.
- Slice into squares and serve chilled.
