Ingredients:
- 1 cup all-purpose flour (or chickpea flour for gluten-free)
- 2 eggs
- 1/2 cup milk (or water for a lighter version)
- 1/2 teaspoon baking powder
- Salt and pepper, to taste
- 1/2 cup mixed vegetables (like finely chopped carrots, bell peppers, and green onions)
- Fresh herbs (like cilantro or parsley), chopped
- 1/4 teaspoon turmeric powder (optional, for color)
- Oil or butter for frying
Instructions:
- Prepare the Batter:
- In a mixing bowl, whisk together the flour, baking powder, salt, pepper, and turmeric powder.
- Add the eggs and milk, and mix until smooth.
- Fold in the vegetables and herbs.
- Cook the Pancakes:
- Heat a non-stick skillet over medium heat and add a little oil or butter.
- Pour a ladleful of batter into the skillet, spreading it into a thin layer.
- Cook for 2-3 minutes until bubbles start to form on the surface, and the edges begin to lift.
- Flip the pancake and cook for another 1-2 minutes until golden brown on both sides.
