Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 2 cups baby potatoes, halved (or diced regular potatoes)
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup cherry tomatoes, halved (optional)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1/2 cup croutons or toasted bread cubes
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Preheat the oven to 400°F (200°C).
    • Toss the halved baby potatoes with olive oil, salt, pepper, and smoked paprika.
    • Spread them on a baking sheet and roast for 20-25 minutes, or until golden and tender.
  2. Cook the Ground Beef:
    • In a large skillet over medium heat, cook the ground beef with diced onions. Season with salt, pepper, and garlic powder.
    • Cook until the beef is browned and cooked through, breaking it into crumbles. Drain any excess fat.
  3. Assemble the Casserole:
    • In a baking dish, combine the cooked ground beef, roasted potatoes, and corn kernels. Add the cherry tomatoes if using.
    • Sprinkle the shredded cheese over the top.
  4. Add the Croutons:
    • Scatter croutons or toasted bread cubes on top of the cheese layer for added crunch.
  5. Bake:
    • Bake in the oven at 400°F (200°C) for 10-15 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove from the oven, sprinkle with fresh parsley, and serve hot.
