Fruit and Cream Roll Cake with Almond Topping
Ingredients:
For the Sponge Cake:
- 4 large eggs
- 1 cup sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- A pinch of salt
For the Fruit Filling:
- 2 cups mixed fruit, chopped (such as apples, strawberries, and peaches)
- 2-3 tbsp sugar
- 1 tbsp lemon juice
- Optional: 1 tsp cinnamon (for extra flavor)

- 1 cup heavy whipping cream
- 1 cup mascarpone or cream cheese
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
For the Topping:
- 1/2 cup sliced almonds, toasted
Instructions:
- Prepare the Fruit Filling:
- In a bowl, mix the chopped fruit with sugar and lemon juice. Let it sit for about 10-15 minutes until the juices are released.
- Spread the fruit mixture evenly on a baking sheet lined with parchment paper (as shown in the image) and set aside.
- Make the Sponge Cake:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat the eggs and sugar together until light and fluffy.
- Sift in the flour, baking powder, and salt, and fold gently until combined.
- Add vanilla extract and mix just until incorporated.
- Pour the batter evenly over the fruit on the baking sheet.
- Bake for about 12-15 minutes or until the cake is golden and springs back when touched.
- Prepare the Cream Filling:
- In a mixing bowl, beat the heavy cream until soft peaks form.
- Add mascarpone (or cream cheese), powdered sugar, and vanilla extract. Beat until smooth and fluffy.
- Assemble the Roll Cake:
- Once the sponge cake is done and slightly cooled, carefully flip it onto a clean surface or another piece of parchment paper.
- Spread a layer of the cream filling over the sponge, leaving a small border around the edges.
- Carefully roll the cake from one end to the other, peeling off the parchment paper as you go.
- Finishing Touches:
- Spread a thin layer of cream on top of the roll and sprinkle with toasted almond slices.
- Chill in the fridge for at least 1 hour before slicing for best results.
