Ingredients:

  • 4 medium potatoes, peeled and boiled
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 green onions, chopped (optional)
  • Salt and pepper, to taste
  • 1/4 teaspoon garlic powder (optional)
  • 1 egg
  • 1/4 cup all-purpose flour
  • 2-3 tablespoons vegetable oil, for frying

For the Creamy Sauce:

  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon fresh dill or parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Potato Mixture:
    • In a large mixing bowl, mash the boiled potatoes until smooth.
    • Add the shredded mozzarella (or cheddar), Parmesan, parsley, green onions, salt, pepper, and garlic powder (if using). Mix well.
    • Add the egg and flour to the potato mixture and mix until everything is well combined.
  2. Form the Patties:
    • Take a small portion of the potato mixture and shape it into a patty, about 1/2 inch thick. Repeat with the remaining mixture.
  3. Cook the Patties:
    • Heat vegetable oil in a non-stick skillet over medium heat.
    • Place the potato patties in the skillet and cook for 3-4 minutes per side, or until golden brown and crispy. Cook in batches if necessary to avoid overcrowding the pan.
  4. Make the Creamy Sauce:
    • In a small bowl, combine sour cream (or Greek yogurt), chopped dill or parsley, minced garlic, salt, and pepper. Mix well.
  5. Serve:
    • Serve the hot and crispy potato patties with the creamy sauce on the side.
