Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • 1 large egg
  • 3/4 cup buttermilk (or milk with a splash of vinegar)
  • 2 tablespoons melted butter (plus more for frying)
  • 1 teaspoon vanilla extract
  • Granulated sugar, for dusting

Instructions:

  1. Prepare the Batter:
    • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, whisk the egg, buttermilk, melted butter, and vanilla extract until combined.
    • Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  2. Cook the Pancakes:
    • Heat a non-stick skillet over medium heat and add a small amount of butter.
    • Transfer the batter to a piping bag or use a spoon, and pipe or drop small circles of batter onto the skillet.
    • Cook each side for 1-2 minutes, or until golden brown.
  3. Serve:
    • Transfer the mini pancakes to a plate and sprinkle generously with granulated sugar.
    • Serve warm and enjoy!
