Meat and Potato Roast
Ingredients
- 1 lb (450 g) pork or lamb shoulder, cut into chunks
- 4-5 medium potatoes, cut into chunks
- 1 large onion, sliced
- 3-4 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp paprika
- 1 tsp garlic powder
- Fresh parsley, chopped (for garnish)
- Fresh thyme or rosemary (optional for extra flavor)
Instructions
Step 1: Prepare the Ingredients
- Preheat your oven to 400°F (200°C).
- Cut the meat into bite-sized chunks if not already done, and season with salt, pepper, paprika, and garlic powder.
- Cut the potatoes into similar-sized chunks for even cooking.
Step 2: Sear the Meat
- In a large oven-safe skillet or roasting pan, heat 2 tablespoons of olive oil over medium-high heat.
- Add the meat chunks and sear until they are browned on all sides. This should take about 5-7 minutes.
- Remove the meat from the skillet and set aside.
Step 3: Cook the Potatoes and Onion

- Add another tablespoon of olive oil to the skillet if needed, then add the potatoes and onion slices.
- Season with a bit of salt and pepper, and cook for about 5 minutes until the potatoes begin to brown slightly.
Step 4: Combine and Roast
- Return the seared meat to the skillet with the potatoes and onions.
- Add fresh thyme or rosemary sprigs if desired, and transfer the skillet to the preheated oven.
- Roast for 25-30 minutes or until the potatoes are tender and the meat is cooked through.
Step 5: Garnish and Serve
- Remove from the oven and garnish with fresh chopped parsley.
- Serve warm, directly from the skillet or transfer to a serving bowl.
