Apple Pie with Meringue and Nut Topping
Ingredients
For the Crust:
- 1 1/2 cups (190 g) all-purpose flour
- 1/2 cup (115 g) unsalted butter, cold and cubed
- 1/4 cup (50 g) sugar
- 1 large egg
- A pinch of salt
For the Apple Filling:
- 4-5 medium apples, peeled, cored, and chopped
- 1/4 cup (50 g) sugar
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 1/4 cup chopped nuts (walnuts or almonds work well)

- 3/4 cup (150 g) sugar
- 1/2 tsp vanilla extract
- A pinch of salt
- 1/4 cup sliced almonds for garnish

Step 1: Make the Crust
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the egg and mix until the dough comes together. If it’s too dry, add a teaspoon of water at a time.
- Press the dough evenly into the bottom of a lined square or rectangular baking dish.
- Bake for about 10-12 minutes until it begins to set but isn’t fully baked. Remove from the oven and set aside.
Step 2: Prepare the Apple Filling
- In a large bowl, combine the chopped apples, sugar, cinnamon, and lemon juice. Mix well to coat the apples.
- Spread the apple mixture over the partially baked crust.
- Sprinkle chopped nuts evenly over the apples.
Step 3: Make the Meringue Topping
- In a clean, dry mixing bowl, beat the egg whites with a pinch of salt until soft peaks form.
- Gradually add the sugar and continue beating until the meringue is glossy and forms stiff peaks.
- Beat in the vanilla extract.
Step 4: Assemble and Bake
- Spread the meringue evenly over the apple and nut layer.
- Sprinkle sliced almonds on top of the meringue for extra crunch and garnish.
- Bake for 20-25 minutes, or until the meringue is golden brown and the apples are tender.
