Spicy Beef and Tomato Macaroni Comfort
Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (adjust based on spice preference)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 cups canned diced tomatoes
- 1 tablespoon tomato paste
- 2 cups water or beef broth
- 2 cups elbow macaroni
- Fresh parsley, chopped (for garnish)
Directions
- Prepare the Ingredients:
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Cook the Beef:
- Add the ground beef to the skillet. Break it apart with a spoon and cook until browned. Season with salt, pepper, red pepper flakes, oregano, and basil.
- Add Tomatoes and Simmer:
- Stir in the diced tomatoes, tomato paste, and water or beef broth. Bring the mixture to a simmer and let it cook for about 15 minutes, or until it thickens slightly.
- Cook the Macaroni:
- In a separate pot, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
- Combine and Serve:
- Add the cooked macaroni to the skillet with the beef and tomato sauce. Stir well to combine and let everything heat together for a few minutes.
- Serve hot, garnished with chopped fresh parsley.
