Italian Sausage and Spinach Soup

Italian Sausage and Spinach Soup
Ingredients:
- 1 lb Italian sausage (casings removed, if applicable)
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional for heat)
- 4 cups chicken broth
- 1 (28-ounce) can crushed tomatoes
- Salt and pepper to taste
- 3 cups fresh spinach, roughly chopped
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese

- Cook the Sausage:
- In a large pot, heat the olive oil over medium heat.
- Add the Italian sausage and cook, breaking it apart with a spoon, until browned and no longer pink. Remove the sausage from the pot and set aside.
- Sauté Vegetables:
- In the same pot, add the diced onion. Sauté until the onion is translucent and softened.
- Add the minced garlic, oregano, basil, and red pepper flakes. Cook for about 1 minute until fragrant.
- Simmer the Soup:
- Pour in the chicken broth and crushed tomatoes. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer. Let simmer for about 15-20 minutes to allow the flavors to blend.
- Season with salt and pepper to taste.
- Add Spinach and Cream:
- Add the chopped spinach to the pot and stir until it wilts.
- Pour in the heavy cream and stir until well combined.
- Add Cheese and Serve:
- Return the cooked sausage to the pot and stir to reheat.
- Once the soup is hot, sprinkle shredded mozzarella cheese over the top of the soup in the pot, or add it to individual servings.
- Allow the cheese to melt slightly before serving.
Serving Suggestions:
- Serve this rich and comforting soup with a side of crusty bread for dipping.
- Garnish with extra red pepper flakes or fresh basil if desired.
