Snowball Cookies with Chocolate Chips

 

 

 

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for coating)
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup toasted nuts (walnuts or pecans), finely chopped
  • 1/2 cup mini chocolate chips

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Dough:
    • In a large mixing bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
    • Stir in the vanilla extract.
    • Gradually mix in the flour and salt until the mixture comes together.
    • Fold in the chopped nuts and mini chocolate chips.
  3. Shape the Cookies:
    • Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
  4. Bake:
    • Bake in the preheated oven for 14-18 minutes or until the bottoms are just starting to brown and the cookies are set.
  5. Cool and Coat:
    • Allow the cookies to cool on the pan for about 5 minutes, then while still warm, roll them in additional powdered sugar.
    • Let them cool completely on a wire rack.
    • Once cool, roll them in powdered sugar again to get a generous coating.
  6. Serving:
    • Serve these delightful cookies as a perfect treat with coffee or tea.

Tips:

  • Ensure the nuts are finely chopped to get a good distribution in each cookie.
  • The second coating of powdered sugar gives them their characteristic snowy appearance.
  • These cookies are perfect for making ahead as they store well in an airtight container.
