Cheesy Beef and Veggie Burritos
Ingredients:
- For the Beef Filling:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeño, seeded and finely chopped (optional)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- For the Burritos:
- 4 large flour tortillas
- 1 cup cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup corn kernels
- 1/2 cup black beans, rinsed and drained
- 2 green onions, chopped
- Fresh cilantro, chopped (optional)
- Vegetable oil, for frying

- Cook the Beef:
- In a large skillet over medium heat, cook the ground beef until browned.
- Add the onion, garlic, bell pepper, and jalapeño, cooking until vegetables are tender.
- Stir in chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2 minutes. Set aside.
- Assemble the Burritos:
- Lay out the flour tortillas on a flat surface.
- Sprinkle a mix of cheddar and Monterey Jack cheese on each tortilla.
- Divide the beef mixture evenly among the tortillas, spreading it over the cheese.
- Add corn, black beans, green onions, and cilantro over the beef.
- Fold the sides of the tortilla in, then roll up from the bottom to enclose the filling, forming a tight burrito.
- Cook the Burritos:
- Heat a small amount of vegetable oil in a large skillet over medium heat.
- Place the burritos seam side down in the skillet.
- Cook until the burritos are golden brown and crispy on both sides, about 2-3 minutes per side.
- Serve:
- Serve the burritos hot, with sour cream, salsa, or guacamole on the side.
