Ingredients:

    • 1 cup heavy cream
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract

    • 1/2 cup dried apricots, chopped

    • 1/2 cup raisins
    • 1/2 cup toasted almonds, sliced
    • 1/2 cup toasted hazelnuts, chopped
  • Optional:
    • 2 tablespoons orange liqueur or rum (for soaking the fruits)

Instructions:

  1. Prepare the Fruit Mixture:
    • If using, soak the dried apricots, cranberries, and raisins in orange liqueur or rum for at least 1 hour, then drain.
    • Mix the soaked fruits with the toasted almonds and hazelnuts.
  2. Prepare the Cream Base:
    • In a mixing bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until the mixture is smooth and holds stiff peaks.
  3. Assemble the Terrine:
    • Line a loaf pan with plastic wrap, leaving enough overhang to cover the top later.
    • Spread a layer of the cream mixture at the bottom of the pan.
    • Sprinkle a generous layer of the fruit and nut mixture over the cream.
    • Continue layering cream and fruit/nut mixture until all ingredients are used up, finishing with a layer of cream.
    • Fold the plastic wrap over the top to cover. Chill in the refrigerator for at least 4 hours, or overnight, to set.
  4. Serve:
    • Unwrap the top of the terrine and invert the pan onto a serving platter. Remove the pan and plastic wrap.
    • Slice the terrine and serve chilled. Optionally, garnish with more dried fruits or a drizzle of honey.
