Classic Chess Pie Recipe
Ingredients:
- 1 unbaked 9-inch pie crust (store-bought or homemade)
- 1 ½ cups granulated sugar
- 3 tablespoons cornmeal
- 1 tablespoon all-purpose flour
- ¼ teaspoon salt
- ½ cup melted butter (cooled)
- 3 large eggs
- ½ cup whole milk
- 1 tablespoon white vinegar or lemon juice
- 1 teaspoon vanilla extract
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Filling:
- In a large bowl, combine the sugar, cornmeal, flour, and salt. Mix well to evenly distribute the dry ingredients.
- Add the melted butter, eggs, milk, vinegar (or lemon juice), and vanilla extract to the dry ingredients. Stir until the mixture is smooth and well combined.
- Assemble the Pie:
- Pour the filling into the unbaked pie crust, smoothing the top with a spatula if necessary.
- Bake:
- Place the pie on the middle rack of the oven and bake for 45-50 minutes, or until the filling is set and the top has a golden-brown crust. The center should be slightly jiggly but will firm up as it cools.
- Cool and Serve:
- Allow the pie to cool completely before slicing. This pie is best served at room temperature and can be enjoyed plain or with a dollop of whipped cream.
