Ingredients:

  • 1 unbaked 9-inch pie crust (store-bought or homemade)
  • 1 ½ cups granulated sugar
  • 3 tablespoons cornmeal
  • 1 tablespoon all-purpose flour
  • ¼ teaspoon salt
  • ½ cup melted butter (cooled)
  • 3 large eggs
  • ½ cup whole milk
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Filling:
    • In a large bowl, combine the sugar, cornmeal, flour, and salt. Mix well to evenly distribute the dry ingredients.
    • Add the melted butter, eggs, milk, vinegar (or lemon juice), and vanilla extract to the dry ingredients. Stir until the mixture is smooth and well combined.
  3. Assemble the Pie:
    • Pour the filling into the unbaked pie crust, smoothing the top with a spatula if necessary.
  4. Bake:
    • Place the pie on the middle rack of the oven and bake for 45-50 minutes, or until the filling is set and the top has a golden-brown crust. The center should be slightly jiggly but will firm up as it cools.
  5. Cool and Serve:
