Ingredients:
- 1 tbsp olive oil
- 1 lb (450g) ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated carrots (optional, for added texture and flavor)
- 1/4 cup tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and pepper, to taste
- 1/4 cup fresh parsley, chopped (plus extra for garnish)
- 1 cup shredded mozzarella or cheddar cheese (optional)
- 1 package (about 2 sheets) puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Sour cream or Greek yogurt, for serving

- Prepare the Filling:
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and fully cooked through.
- Stir in the grated carrots (if using), tomato paste, Worcestershire sauce, smoked paprika, and cumin. Season with salt and pepper.
- Let the mixture cook until well combined and thickened. Remove from heat, stir in the fresh parsley, and let it cool slightly.
- Preheat the Oven:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Assemble the Puff Pastry Rolls:
- On a lightly floured surface, roll out the puff pastry sheets to smooth any folds.
- Cut each puff pastry sheet into rectangles (about 4–6 per sheet, depending on size).
- Spoon a portion of the beef mixture along one side of each rectangle, leaving a little space at the edges. If desired, sprinkle some shredded cheese over the beef filling for extra richness.
- Roll the pastry over the filling to create a log shape. Press the edges to seal and place each roll seam-side down on the prepared baking sheet.
- Add the Egg Wash:
- Brush the tops of each roll with beaten egg to give them a golden, shiny finish.
- Bake:
- Bake in the preheated oven for 15–20 minutes or until the puff pastry is golden brown and crispy.
- Serve:
- Remove from the oven and let them cool slightly. Garnish with fresh parsley and serve with a dollop of sour cream or Greek yogurt.
Tips:
- For a Mediterranean twist, add a sprinkle of oregano and feta cheese to the filling.
- Make sure the beef mixture is not too wet to avoid soggy pastry.
- These can be made ahead of time and reheated in the oven before serving.
