Fluffy Buttermilk Pancakes
Ingredients:
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 tablespoon granulated sugar
- ½ teaspoon salt
- 1 ¼ cups buttermilk (or regular milk with a teaspoon of vinegar or lemon juice)
- 1 egg
- 3 tablespoons melted butter (plus extra for cooking)
Instructions:
- Prepare the Batter:
- In a large bowl, sift together the flour, baking powder, sugar, and salt.
- In a separate bowl, whisk the buttermilk, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; some lumps are okay. Let the batter rest for 5-10 minutes to activate the baking powder.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface.
- Pour ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until the other side is golden brown, about another 2 minutes.
- Serve:
- Stack the pancakes on a plate, add a pat of butter on top, and drizzle with maple syrup.
