Fluffy Buttermilk Pancakes

 

 

 

Ingredients:

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 ¼ cups buttermilk (or regular milk with a teaspoon of vinegar or lemon juice)
  • 1 egg
  • 3 tablespoons melted butter (plus extra for cooking)

Instructions:

  1. Prepare the Batter:
    • In a large bowl, sift together the flour, baking powder, sugar, and salt.
    • In a separate bowl, whisk the buttermilk, egg, and melted butter until well combined.
    • Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; some lumps are okay. Let the batter rest for 5-10 minutes to activate the baking powder.
  2. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface.
    • Pour ¼ cup of batter onto the skillet for each pancake.
    • Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until the other side is golden brown, about another 2 minutes.
  3. Serve:
    • Stack the pancakes on a plate, add a pat of butter on top, and drizzle with maple syrup.
