Ingredients

  • 1 lb ground beef (or Italian sausage, if preferred)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 tbsp Italian seasoning
  • 1/2 tsp dried basil
  • Salt and pepper, to taste
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese (for serving)
  • 1 cup shredded mozzarella cheese (for serving)
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Cook the Ground Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
  2. Sauté the Onion and Garlic: Add the diced onion to the pot with the cooked beef, sautéing until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add Broth and Tomatoes: Pour in the beef broth, diced tomatoes, and tomato sauce. Stir in the Italian seasoning, basil, salt, and pepper. Bring the soup to a boil, then reduce the heat to a simmer.
  4. Add the Noodles: Add the broken lasagna noodles to the pot. Simmer for 10-12 minutes, or until the noodles are tender, stirring occasionally to prevent them from sticking.
  5. Adjust Seasoning: Taste the soup and add more salt and pepper if needed.
  6. Serve: Ladle the soup into bowls. Top each bowl with a dollop of ricotta cheese, a sprinkle of shredded mozzarella, and fresh basil or parsley for garnish.
