Lasagna Soup Recipe
Ingredients
- 1 lb ground beef (or Italian sausage, if preferred)
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 tbsp Italian seasoning
- 1/2 tsp dried basil
- Salt and pepper, to taste
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese (for serving)
- 1 cup shredded mozzarella cheese (for serving)
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Cook the Ground Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Sauté the Onion and Garlic: Add the diced onion to the pot with the cooked beef, sautéing until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add Broth and Tomatoes: Pour in the beef broth, diced tomatoes, and tomato sauce. Stir in the Italian seasoning, basil, salt, and pepper. Bring the soup to a boil, then reduce the heat to a simmer.
- Add the Noodles: Add the broken lasagna noodles to the pot. Simmer for 10-12 minutes, or until the noodles are tender, stirring occasionally to prevent them from sticking.
- Adjust Seasoning: Taste the soup and add more salt and pepper if needed.
- Serve: Ladle the soup into bowls. Top each bowl with a dollop of ricotta cheese, a sprinkle of shredded mozzarella, and fresh basil or parsley for garnish.
