Creamy Corn Chowder with Bacon and Cheese

 

 

 

Ingredients

  • 6 slices bacon, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño (optional, for heat), seeded and diced
  • 4 cups fresh or frozen corn kernels
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 2 medium potatoes, diced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 1/2 cup crumbled feta or queso fresco (optional, for garnish)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges, for serving

Instructions

  1. Cook the Bacon: In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Use a slotted spoon to remove the bacon and set it aside on a paper towel-lined plate. Leave about 1-2 tablespoons of bacon fat in the pot (discard the rest or save it for another recipe).
  2. Sauté the Vegetables: In the same pot, add the chopped onion, garlic, red bell pepper, and jalapeño (if using). Sauté over medium heat until the vegetables are softened, about 5 minutes.
  3. Add Corn and Potatoes: Add the corn kernels and diced potatoes to the pot. Stir in the smoked paprika, cumin, salt, and pepper.
  4. Add the Broth: Pour in the chicken or vegetable broth, and bring the mixture to a boil. Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  5. Blend for Creaminess: For a creamy texture, use an immersion blender to blend a portion of the chowder directly in the pot (be careful not to blend it all if you want a chunky chowder). Alternatively, transfer about 2 cups of the chowder to a blender, blend until smooth, and return it to the pot.
  6. Add Cream: Stir in the heavy cream and let the chowder simmer for an additional 5 minutes, or until heated through. Adjust the seasoning with more salt and pepper, if needed.
  7. Serve: Ladle the chowder into bowls and top each serving with crispy bacon, crumbled feta or queso fresco, and fresh cilantro. Serve with lime wedges on the side for an extra burst of flavor.
