Ingredients

  • 4 cups broccoli florets (fresh or frozen)
  • 2 cups sharp cheddar cheese, grated
  • 1 cup carrots, grated
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream (optional, for extra creaminess)
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • Salt and pepper, to taste
  • Croutons (for garnish, optional)
  • Extra cheddar cheese (for garnish, optional)

Instructions

  1. Prepare the Broccoli and Carrots: If using fresh broccoli, chop the florets into small, bite-sized pieces. Grate the carrots and set aside.
  2. Sauté the Aromatics: In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onions and garlic, and sauté until the onions are translucent and fragrant, about 3-4 minutes.
  3. Make the Roux: Sprinkle the flour over the onions and garlic, stirring constantly for about 1-2 minutes. This will help thicken the soup.
  4. Add the Broth and Vegetables: Slowly pour in the chicken or vegetable broth while stirring to avoid lumps. Add the grated carrots and broccoli florets. Bring the mixture to a simmer, cover, and cook for 10-15 minutes, or until the broccoli is tender.
  5. Add Milk and Cheese: Reduce the heat to low. Pour in the milk and, if desired, heavy cream. Gradually add the grated cheddar cheese, stirring until the cheese has melted and the soup is creamy. Season with salt and pepper to taste.
  6. Blend (Optional): For a smoother texture, use an immersion blender to blend the soup partially, leaving some broccoli chunks. If you prefer a chunkier soup, skip this step.
  7. Serve: Ladle the soup into bowls and garnish with croutons and extra cheddar cheese, if desired.
