Crispy Baked or Pan-Fried Dumplings

Ingredients:

– 1 package of dumpling wrappers (wonton or gyoza wrappers)
– 1/2 pound (225g) ground pork, chicken, or shrimp (or a combination)
– 1/2 cup finely chopped cabbage
– 1/4 cup finely chopped scallions (green onions)
– 2 cloves garlic, minced
– 1 tablespoon soy sauce
– 1 teaspoon sesame oil
– 1 teaspoon grated ginger
– 1/2 teaspoon salt
– 1/4 teaspoon ground black pepper
– 1 tablespoon vegetable oil (for frying)
– Soy sauce, chili oil, or dipping sauce of your choice

 Instructions:

1. **Prepare the Filling:**
– In a mixing bowl, combine the ground meat (or shrimp), chopped cabbage, scallions, garlic, soy sauce, sesame oil, grated ginger, salt, and pepper. Mix well until all ingredients are thoroughly combined.

2. **Assemble the Dumplings:**
– Place a dumpling wrapper on a flat surface.
– Spoon about 1 teaspoon of the filling mixture into the center of the wrapper.
– Moisten the edges of the wrapper with a little water, then fold it over to create a half-moon shape or bring the corners together to form a square or rectangle. Press the edges to seal, making sure no air is trapped inside.
– Repeat with the remaining filling and wrappers.

3. **Cooking Options:**

**For Pan-Fried Dumplings:**
– Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium heat.
– Place the dumplings in the skillet, flat side down, and cook until the bottoms are golden brown, about 2-3 minutes.
– Add 1/4 cup of water to the skillet and cover with a lid. Steam the dumplings for about 3-4 minutes until the filling is cooked through.
– Remove the lid and continue to cook until the remaining water evaporates, and the dumplings are crispy on the bottom.

**For Baked Dumplings:**
– Preheat the oven to 375°F (190°C).
– Arrange the dumplings on a baking sheet lined with parchment paper.
– Lightly brush the tops of the dumplings with vegetable oil.
– Bake in the preheated oven for 15-20 minutes, or until the dumplings are golden brown and crispy.

4. **Serve:**
– Serve the dumplings hot with soy sauce, chili oil, or your favorite dipping sauce.
– Garnish with extra chopped scallions if desired.
