**Ingredients:**

– 1 package (2 sheets) of store-bought pie crust or homemade pie dough
– 1 egg, beaten (for egg wash)

– 1 lb (450g) pork, chicken, or beef, diced
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 cup bell peppers, chopped (use a mix of red, yellow, and green)
– 1 cup mushrooms, sliced
– 1/2 cup carrots, diced
– 1/2 cup celery, diced
– 1/4 cup all-purpose flour
– 1 cup chicken or beef broth
– 1/4 cup heavy cream
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)

**Instructions:**

1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).

2. **Prepare the Filling:**
– In a large skillet, heat the olive oil over medium-high heat. Add the diced meat and cook until browned on all sides. Remove the meat from the skillet and set it aside.
– In the same skillet, add the chopped onion, garlic, bell peppers, mushrooms, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
– Stir in the flour and cook for another 1-2 minutes to eliminate the raw flour taste.
– Gradually add the broth, stirring constantly, until the mixture thickens. Stir in the heavy cream, thyme, rosemary, salt, and pepper.
– Return the cooked meat to the skillet and mix everything together. Let the filling simmer for a few minutes to allow the flavors to meld.

3. **Assemble the Pie:**
– Roll out one sheet of pie dough and fit it into a 9-inch pie dish. Trim the edges if necessary.
– Pour the meat and vegetable filling into the pie crust.
– Roll out the second sheet of pie dough and place it over the filling. Trim and crimp the edges to seal the pie. Cut a few small slits in the top crust to allow steam to escape.
– Brush the top crust with the beaten egg for a golden finish.

4. **Bake:**
– Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.

5. **Serve:**
– Remove the pie from the oven and let it cool for a few minutes before slicing. Garnish with chopped fresh parsley and serve warm.
