Flavored Vegetable Flatbread

**Ingredients:**

– 2 cups all-purpose flour
– 1 teaspoon sugar
– 1/2 teaspoon salt
– 1 teaspoon active dry yeast
– 1/2 cup warm water (around 110°F / 43°C)
– 1/4 cup plain yogurt
– 2 tablespoons olive oil
– 1/2 cup finely diced mixed vegetables (such as bell peppers, carrots, and green onions)
– 1/4 cup shredded cheese (optional)
– Extra flour for dusting

**Instructions:**

1. **Activate the Yeast:**
– In a small bowl, dissolve the sugar in the warm water, then sprinkle the yeast over the top. Let it sit for about 5-10 minutes until frothy.

2. **Make the Dough:**
– In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast, yogurt, and olive oil.
– Mix until the dough starts to come together, then knead for about 5-7 minutes until smooth and elastic.
– Gently fold in the finely diced vegetables and shredded cheese (if using), ensuring they are evenly distributed throughout the dough.

3. **Let the Dough Rise:**
– Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

4. **Shape the Flatbreads:**
– Punch down the dough and divide it into equal portions (the image shows about 8 pieces).
– Roll each piece into a ball and flatten it into a disc, about 1/4 inch thick, using your hands or a rolling pin.

5. **Cook the Flatbreads:**
– Heat a non-stick skillet or griddle over medium heat.
– Cook each flatbread for 2-3 minutes on each side, until golden brown and puffed. You may brush them with a little oil or butter for extra flavor while cooking.

6. **Serve:**
– Stack the cooked flatbreads on a plate and serve warm. They can be enjoyed on their own, with dips, or as a side to your favorite main dish.

These vegetable flatbreads are perfect for breakfast, snacks, or as an accompaniment to soups and stews. Enjoy!
