Spicy Cheese Dip
**Ingredients:**
– 2 cups shredded sharp cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1 cup milk
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 1 can (10 ounces) diced tomatoes with green chilies, drained
– 1 jalapeño pepper, diced (optional, for extra heat)
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– Salt and pepper to taste
**Instructions:**
1. **Melt Butter:** In a medium saucepan over medium heat, melt the butter.

2. **Make Roux:** Once the butter is melted, add the flour and stir constantly for about 1 minute to form a roux. It should be smooth and free of lumps.
3. **Add Milk:** Gradually whisk in the milk. Continue to whisk until the mixture is smooth and starts to thicken, about 3-5 minutes.
4. **Add Cheese:** Reduce the heat to low and slowly add the shredded cheddar and Monterey Jack cheeses, stirring constantly until fully melted and smooth.
5. **Add Tomatoes and Peppers:** Stir in the drained diced tomatoes with green chilies and the diced jalapeño pepper if using.
6. **Season:** Add the garlic powder, onion powder, and salt and pepper to taste. Stir to combine.
